Class DescriptionsKitchen 101This class covers the kitchen basics-knife skills, kitchen organization and cooking techniques, including sautéing, braising and roasting. Our mission is to help you be comfortable and confident in the kitchen. Chinese KitchenThis is a primer on Chinese cooking. You will learn about asian ingredients, stir fry techniques and how to make quick Chinese soups, noodles and dumplings. Tapas, Mezze, AntipastoExplore the casual side of Mediterranean dining and learn about Spanish Tapas, Greek Mezze and Italian Antipasto, three similar yet distinct approaches to appetizers and hors d'oeuvres. You'll get to make a traditional Spanish tortilla (not at all like a Mexican tortilla), dates & bacon in roasted red pepper sauce, spinach & cheese pies in filo, stuffed grape leaves, marinated vegetables & savory tarts. Clay Pot CookeryLearn about a wonderful, easy, healthy, international way to cook. You will learn techniques for different clay pots: Roast chicken and root vegetables in the Romertopf, Moroccan vegetable and chickpea tagine, and braised pork and bok choy in a Chinese clay pot. Fresh PastaSoft & silky, fresh pasta is totally different from its al dente cousin, dried pasta. We'll teach you how to use a pasta machine to crank out your own spaghetti, linguine and tagliatelle, as well as stuffed pasta like ravioli, tortellini and cannelloni. In addition to making the noodles, we'll also make a few different sauces to go with the different types of pasta. Italian CasserolesYou'll learn myriad kitchen skills - chopping, grilling, sautéing, poaching, sauce-making, working with pie & filo doughs - as we assemble from scratch Tuscan Chicken Pie with white beans & rosemary, Polenta Lasagna with grilled sausage & vegetables, and Mediterranean Vegetable Pie in Filo. We'll also show you how to turn these 3 basic recipes into a dozen different variations - by buying what looks good in the market each day. Greek FeastCreate a classic Greek meal, including the art of mezze's, Greek village salad, horiatiki, and cooking techniques from grilling fresh fish and leg of lamb, to hearty Greek casseroles such as Moussaka and Pasticcio. A day in the kitchen culminates with a big feast with friends. Relaxing in the KitchenMany of us have lost the art of lingering at the dinner table with good food and conversation. Spend the day relaxing in the kitchen creating and preparing menus that are worth hanging out at the dinner table for - create a European-style multi course meal that invites you to relax at the dinner table and enjoy the company of your dinner guests.
